Recipe : Stuffed Avocados

April here again!

So my one year keto-versary has come and gone. I didn’t make it to my goal weight of 135. I made it down to 150 and stalled. I blame it partly on two things:

  1.  We started working out. My size has gone down, but my weight has remained relatively unchanged. Even gained some back. I’m okay with this as long as my size continues to go down and I continue to tone up!
  2. I suspect I may have a thyroid problem. Hypothyroidism runs in my immediate family and I’ve been exhibiting symptoms for quite a while, including unexplainable weight gain. I plan to go to the doctor to have thorough testing done and will be glad to post my results. As I’ve been experiencing symptoms since before my diet change over a year ago, I’m confident it’s not related to keto.

However, I did officially make it into a size 6 dress, size 8 pants! There’s always that to be excited about. I also can wear junior size 9 again. It’s been 15 years since that last happened.

Today I wanted to take a moment to post my favorite, super easy avocado recipe!

 

Cheesy, Bacon filled, Stuffed Avocados!!

Avocados are highly beneficial in a ketogenic diet. Besides being naturally higher in fats, they are a great source of potassium, vitamins E and B and folic acid. They are filling and make a great side dishes or even main courses if prepared properly.
Without further ado, here’s how to make ‘Stuffed Avocados!’

Recipe:

  • Ripe Avocados (I can’t put a number on it. I usually eat one whole avocado as a meal. You may eat more or less)
  • Shredded cheese of your choice. (For the picture I used mozerella and cheddar curds)
  • Shredded, sliced or chopped COOKED meat of your choice. (I used bacon in the pictures, but chicken or left-over steak work great too.
  • Kosher salt or sea salt
  • Seasonings of your choice. (I typically use onion powder, pepper and a little bit of a louisiana spice. However, you can use a variety of seasonings and still have a wonderful outcome.)
  • A bowl
  • A spoon, a fork (or a masher)
  • A tinfoil lined pan

Directions :
Preheat your oven to 300 degrees. (Or use your toaster oven!)

Cut the avocados in half, remove the pits. Carefully take the avocado meat out of the rind without tearing it. You may want to use a spoon to scoop it. Place the avocado meat in a bowl and mash it all up using your fork or masher.
Add in your seasonings, cheese, meat and mix thoroughly. Scoop this mixture back into the shells, place on tinfoil lined pan and cook until the cheese is melted.   Pull out and let cool a bit before digging in!

There you have it! It’s tasty, easy and fits into a typical ketogenic macro. Obviously, it will vary in carbs, fats and proteins depending on what you use to stuff it.
